The beauty of the XO is that it can be re-imaged easily.
Each student should have their own usb stick and the skills to be able to re-image an XO and add activities.
They should also learn the skills to backup their data.
I would recommend not trying to lock down the devices.
If a student makes a mistake and stuffs up their system. They re-image it. If they haven't backed up their data, welcome to the real world.
Hopefully they learn by their mistakes.
