  Fructose/Glucose projects (note names doesn't include release number) are
  integrated with trunk of source repository for development of
upcoming sugar release.
  So you should start translation work there.

  Projects with release number are for older releases.  That is the
place for localization of  older release of sugar (say, development is
working with older release).  If you are looking at only the next
release you could ignore them.

  Honey is for collection of various activities that don't belong to
Fructose.  Currently development schedule of activities in the project
aren't tied to development of sugar release (unfortunately).  If you
translate some activity, next release of the activity will include
your translations.  But it is difficult to know when the next release
(with your translation) will go out :-<    You may want to download
and install translations manually.
You don't need to translate all of activities in the project; just
translate one-by-one in your priority.


  Sucrose and Ribose are just a conceptual layer in architecture of
sugar and you could ignore in context of localization.
