I'm volunteering to do the activity tests for Spanish, Kinyarwandan,
Kreyol and Mongolian. I'll try to do the others if time permits, and
hopefully, we'll have some feedback from the language teams too (I
already have a mail from the Turkish team asking how they can do the
testing of their translations)

One week should be enough. Do announce on this list when you have a
candidate to be tested. One of the things we should remember is that
translation updates are coming in even now. So, when there is a new
bugfix package, we can assume almost always that it also contains
translation updates. So the test should be done ideally on a well
frozen RC.
