My guess is that the screencast being recorded is consuming a
significant part of the nand flash and the kernel is busy finding
where to save the data and compressing it.

I think the squashfs issue you are having is due to an old kernel
version. F11 and Ubuntu Jaunty should have no problems creating the
stick.
