This discussion of the capabilities of unionfs make it sound like just
what we want:

Further, the file versioning capabilities this introduces would make
it useful to have a unionfs on the whole file system during upgrades.
We can consistently keep some small number (1? 2?) of 'backups'
available, and you can instantly roll back to one of these backups if
an upgrade fails.  The versioning on various bits (content, student
backups) can be independent.
