Which one is the latest signed image for 1.5? os64? os20x?

Not only official builds are signed -- a build starts out as a signed
candidate, and is promoted to official when it's finally released.

In other words:  os201 will probably be the 10.1.1 release, but it
isn't yet.  The signatures haven't been tested yet, and it's not
guaranteed that there won't be a bug found that affects production
and needs to be fixed.
