Try typing just ejabberdctl to see the available commands.

Specifically:
[wad at jabber ~]$ sudo ejabberdctl ejabberd stats onlineusers
140
[wad at jabber ~]$ sudo ejabberdctl ejabberd stats registeredusers
7461
