 Starting to look at this:

 Gnumeric save the default font in dconf
 /org/gnome/gnumeric/core/defaultfont/

 You can change the value in Gnumeric -> Edit -> Preferences -> Font and
 see the change in the terminal doing

  dconf dump /org/gnome/gnumeric/core/defaultfont/

 The value can be changed in the command line doing:

  dconf write /org/gnome/gnumeric/core/defaultfont/size 7.0

 But I don't know if you can use this when create the image. Please
 confirm.

 Terminal and Gedit have big fonts too.

 I could not found the dpi configuration in gnumeric or in gnome.

 Tested in os5
