 a recently closed activity takes two clicks.

 This isn't true, actually.  Collaboration is really a persistent property
 of an activity, and the participants all share in the instance across
 stops/resumes.  Your statement about the non-destructive nature holds true
 though, with each individual keeping their own history (once we have
 versions, of course).

 This sounds like a fair alternative to my suggestion. It's actually a
 little more complicated, since the result of multiple participants typing
 at once seems undefined to me.  I agree in full with the educational
 value, though, and I think we should really make sure to nail this
 behavior when we integrate it.
